1. Preheat oven to 375 degrees and spray a 24-cup mini cupcake tin with cooking spray.
2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In a small bowl whisk the oil, brown sugar, egg, vanilla, pumpkin, and milk.
4. Add the wet ingredients to the dry ingredients and stir till just combined.
5. Pour batter evenly into the 24-cup mini muffin tin.
6. Bake for 10-12 minutes.
7. While doughnut are cooking prepare cinnamon coating but melting butter in a small cup (like a custard cup).
8. Pour sugar and cinnamon into a ziploc bag and mix together.
9. When doughnuts are done cooking and have cooled for about 1-2 minutes remove doughnuts and dip in the butter. Then placed buttered doughnuts (about six at a time) into ziploc bag with sugar mixture.
10. Toss the doughnuts in the sugar, with the bag closed, until the doughnuts are covered.
11. Remove and place on a plate and repeat with remaining doughnuts.
These are best right out of the oven.
